This is a perfect dish as an appetizer or a simple starter. Serve with any hunk of cheese you have and some crackers. Make this about a day before to let the flavors meld together. Arrange on a plate and make it as pretty as you want. Here we used some local microgreens and sunflower petals to pretty up the plate. Enjoy!

Ingredients

  • Pickling Liquid
  • 1 Cup Rice Wine Vinegar

  • 2 oz Sugar

  • 1 TB Mutard Seeds

  • 1 Each Bay Leaf

  • Vegetables
  • 6 Cherry Tomatoes

  • 1 Cucumber

  • 1 Beet

  • 1 Vidalia Onion

  • 2 Garlic Cloves

  • Peach

Pickling Liquid

  • Put all ingredients in a pot and bring to boil. Taste to see if it is to your liking. You may need to add more sugar or vinegar depending on your taste.
  • Remove from heat and let cool to room temperature. This pickling liquid can be used to pickle many items. An all purpose pickling liquid!
  • Vegetables
  • Tomatoes – Bring pot of water to boil. Add Cherry Tomatoes and blanch for 30 second. Remove and run under cold water. Peel Tomatoes the best you can. Pour over the cold pickling liquid.
  • Cucumber – Wash and slice cucumber to desired thickness. Place in bowl and pour over cold pickling liquid. Done!
  • Beets – Turn oven to 350. Wash and place beets on sheet tray and roast in oven until tender but not over cooked. Remove from oven and let cool. Using a paper towel, rub the outside of the beets to remove the skin. Dice beets to desired size and place in bowl. Pour over pickling liquid. BTW – It is best to cut the beet on a cutting board while a piece of parchment paper is on the cutting board. This will prevent the cutting board from turning a bright red!
  • Vidalia Onion – Peel Onion and thin slice. This can be added to each of the different pickles you wish. They will change flavor and color depending on which item you pickle it with.
  • Garlic – Peel garlic and place whole cloves in each of the pickles you wish.
  • Peaches – Slice peaches and pour pickling liquid over them.
